Adam,

I see on the Workshop page we have lots of equipment listed. Do these items need seperate pages with the Category:Equipment tag so that they appear on equipment page?

They could be, but that would remove them from the Workshop page itself and make it much less browsable as an overview - I did consider tagging the Workshop page itself as equipment for that reason.
